Summer Quiche
1 Pillsbury® Refrigerated Pie Crust
1 cup Milk
3-4 LAND O LAKES® Large White Omega-3 eggs
¾ to 1 Cup grated Gruyère cheese (may substitute with Swiss cheese)
½ cup Zucchini
¼ cup Green Pepper
¼ cup Shallot
½ tsp Salt
1/8 tsp Pepper
Pre Heat oven to 400 degrees F
Bake Pie crust according to package. Remove and let cool.
Cut the Zucchini, green pepper and shallot into small bite size pieces.
Combine milk, eggs, salt and pepper. Add cheese, zucchini, green pepper and shallot. Pour into pie crust. Place aluminum foil strips over the edge of the pie crust so that it does not burn while baking.
Bake for 30-40 min or until lightly browned and fully cooked in center.
