Oh My this is SO SO SO YUMMY! I got it off of my friend Katies Blog. She got it from a couple different places and put it together. I highly Recommend this!
Peanut Noodles with Rotisserie Chicken
Ingredients:
* 1 cup water
* 1/2 cup peanut butter
* 3 tablespoons soy sauce
* 2 tablespoons rice vinegar
* 1 tablespoon brown sugar
* 1 teaspoon fresh ginger (sub 1/4 tsp. ground/dried ginger)
* 8 oz. whole wheat spaghetti (cooked)
* 1 1/2 cups shredded rotisserie chicken
* 1 red bell pepper, sliced
* 1/2 head broccoli, cooked
* 2 green onions, diced
* Peanuts
* Sesame seeds, toasted
* Cilantro leaves (optional)
Preparation:
In a blender, blend together water, peanut butter, rice vinegar and soy sauce, brown sugar, and ginger. Toss with cooked spaghetti, chicken, bell pepper and cooked broccoli. Top with a sprinkle of chopped peanuts, green onions, sesame seeds and cilantro. Serves 4.
