Cream of Asparagus Soup
Asparagus
4 Chicken bouillon cubes
1 onion, finely chopped
1 teaspoon parsley flakes
2 cups half & half
6 tablespoons butter
4 tablespoons flour
Chop asparagus stalks; reserve tips and set aside. put in a 2 quart sauce pan 4 cups of water with bouillon. add chopped onion and asparagus stalks. simmer for 10 min with salt and pepper to taste. remove from heat and blend until smooth in food processor or blender. melt butter in saucepan, add flour to make paste. slowly stir in soup stalk stirring until thick and creamy. Slowly stir in half and half . add tips and serve warm.
